Making “Energy balls” at Lexis Brisbane

Today Lexis students spent the afternoon making ” energy” balls. Healthy eating is very important when you study. So, I am very glad when we can show our students how to make healthy, easy and ,most important, tasty snacks on a budget.

If you missed our workshop today. There are couple of recipes we’ve done and beautiful pictures of our tasty workshop.

5 INGREDIENT PEANUT BUTTER ENERGY BITES

INGREDIENTS

  • ⅔ cup creamy peanut butter
  • ½ cup semi-sweet chocolate chips
  • 1 cup old fashioned oats
  • ½ cup ground flax seeds
  • 2 tablespoons honey

INSTRUCTIONS

  1. Combine all 5 ingredients in a medium bowl. Stir to combine. Place in the refrigerator for 15-30 minutes so they are easier to roll.
  2. Roll into 12 bites and store in the fridge for up to a week.

Irina’s Cacao Energy Balls

INGREDIENTS

  • 1 cup pitted dates
  • 1 cup  almonds
  • 1/3 cup raw cacao powder
  • 1/3 cup coconut oil
  • ½ cup shredded coconut

INSTRUCTIONS

  1. Soak dates in water for a little bit.
  2. Put all ingredients in a food processor.
  3. Roll into balls and cover in coconut.
